Fresh milled flour - Fresh ground flour is not only more flavourful but also more nutritious as the natural oils in the grain can begin to oxidize within a few days of milling and the B vitamins start to break down. Our natural granite stone mills never heats the flour above 42°C (at 46°C the germ of the grain begins to oxidize). Although we sift out the coarsest bran, our fine milling process retains all of the germ in the whole kernel and most of the bran.
Artisan well water - As water is the second ingredient in bread, it is vital that it comes from a pure, life sustaining source, in the same way that all the other organically grown ingredients in our products are. Our deep artesian well water is drilled into a confined aquifer in the Canadian Shield. The water has been tested and found to be free of any biological, agricultural or industrial pollutants. The minerals found in deep well water, are beneficial to sustaining a healthy sourdough culture and fermentation process.
Unrefined Sea Salt - Premium natural North Atlantic sea salt is sun-dried with no addition of whitening or anti-caking chemicals. This traditional dried sea salt contains trace essential minerals. The use of salt is essential to proper fermentation of good bread. However we are able to use less partly due to the more complex flavours offered by naturally fermented breads. Unrefined sea salt is excellent source of trace minerals. In general our bodies are short of trace minerals, even if we are eating a diverse and abundant supply of fruit & vegetables as our soils have become greatly depleted in trace minerals.
Organic Certified - The grain in this bread is from a local organic farm. We pick the grain up on our way back from delivering to our Toronto stores, to keep our environmental footprint as low as possible.
